You will need:

6 medium carrots cut diagonally into 1 inch pieces

4 medium parsnips cut diagonally into 2 inch pieces

2 medium onions cut into thin wedges

2 medium dark orange sweet potatoes, cut into thin wedges

Pre cut sweet potatoes 💕💕💕💕💕🧿🧿🧿🧿🧿🧿🧿❤️❤️❤️❤️❤️

3 tablespoons honey

1 tablespoon olive oil

5 teaspoons thyme

1 teaspoon salt

1/2 teaspoon pepper

1 tablespoon white balsamic vinegar

Steps:

1. Spray 5 to 6 quart slow cooker with cooking spray. In slow cooker mix carrots, sweet potatoes, parsnips and onion

2. In a small bowl, mix honey, olive oil,2 tablespoon thyme and pepper. Pour over vegetables. Stir to coat.

3. cover and cook on low heat until vegetables are tender. About 4 to 5 hours. Just before serving, add vinegar and remaining three tablespoons of thyme and stir.
