Maggie Honey’s Food Blog. 6/5/23. peanut pasta and pineapple mandarin salad (vegan)

You will need spaghetti pasta prepared accordingly to directions

Prepare the peanut sauce in a bowl

(I like to double the recipe)

2 tablespoons peanut butter

2 tablespoons fresh lemon juice

2 tablespoons prepared Mexican salsa

1 teaspoon brown sugar

In a bowl stir all ingredients until well mixed. No cooking for the sauce needed. Toss in to cooked noodles.

Completed sauce. Gotta stir it a bit more but, for the most part. Done.It tastes wonderful with just noodles only 💕💕💕💕💕🧿🧿🧿🧿🧿🧿❤️❤️❤️❤️❤️❤️

For the salad

1 small can pineapple tidbits drained

1 small can mandarin orange slices drained

Mix together in a bowl

I adapted the peanut sauce recipe from the students vegetarian cook book by Carole Raymond. It tastes similar to pad Thai 💕💕💕💕💕the recipe I adapted this from was the peanut pasta recipe with peanut butter sauce 💕💕💕💕💕💕Especially if you go generic brand with most ingredients it’s incredibly inexpensive 💕💕💕💕💕🧿🧿🧿🧿🧿❤️❤️❤️❤️❤️❤️

Serve with a fave beverage. Enjoy 💕💕💕💕💕🧿🧿🧿🧿❤️❤️❤️❤️

It’s a great one with just the pasta alone. Especially when you want a tasty meal with minimum effort. 💕💕💕💕🧿🧿🧿🧿🧿❤️❤️❤️❤️❤️❤️❤️
