Maggie Honey’s Food Blog 5/25/23 Barbecue Chickpeas and Waldorf Salad (Vegan)

BBQ chickpeas recipe is from the compassionate cook by PETA and Ingrid Newkirk. Waldorf salad is one I wing with what I have on hand.

For summer and spring time this is a go to for me as well as any time of year. 💕💕💕💕💕💕🧿🧿🧿🧿🧿❤️❤️❤️❤️❤️

Preheat oven to 350 Degrees F

You will need :

2 16 ounce can chickpeas rinsed and drained

1 16 ounce jar (2 cups) commercial spaghetti sauce

1/3 cup molasses

1/4 cup finely chopped onion

Stir in all ingredients with the chickpeas .

Spray a 1.5 to 2 quart pan with oil. I used cooking spray.

Bake for 1 hour.

While that is baking

Prepare white rice accordingly

And Waldorf salad

Plant based mayonnaise

2 apples rinsed and chopped

2 to 4 celery stalks depending on size chopped.
1/3 to 1/2 cup chopped pecans.
1/3 to 1/2 cup raisins

1/3 to 1/2 cup vegan mayonnaise

1 tablespoon brown sugar mixed in with the vegan mayonnaise

Stir in the salad well to coat.

Enjoy with your beverage of choice.
