Maggie Honey’s Food Blog. 5/12/23. sweet potato or yam with raisins and pineapple. (This recipe is vegan)

Step 1: put the yam or sweet potato in the air fryer. (I chose yam)
Step 2: set the timer.

Step 3: assemble the ingredients.

1 sweet potato or yam.

1 teaspoon raisins.

1/8 teaspoon ground cinnamon

4 tablespoons canned crushed pineapple (preferably unsweetened and drained.

I drain it fully at time of putting it together on the yam.

1 tablespoon chopped walnuts. (I substituted this with chopped pecans this time.

For this size yam I used double the ingredients amount.

When the yam is done cooking, cut it length wise and assemble it with equal amounts on each half. Or cut slit in it lengthwise like a stuffed potato type thing.

This recipe is from the student‘s vegetarian cookbook by Carole Raymond. This is the book that got me excited about cooking and fully switching to vegetarian. I have been fully ovo lacto vegetarian since my early twenties and I’m 46 now. This recipe contains no added sugar and it’s a whole bunch of yum! 💕💕💕💕💕🧿🧿🧿🧿🧿🧿I needed to get some stuff for the Canon dslr.
