💕💕💕💕💕with the enchilada sauce before the oven 💕💕💕💕💕💕this recipe uses no soy or fake meat of any kind. Just the red beans for protein. The recipe calls for black beans but I’m not a huge fan of those for a long time. Had a thing when I was a kid when they made me sick and I haven’t liked them since. It probably was msg but, that’s how much msg can affect me. 💕💕💕💕💕💕for the beans and veggies for the side dish I used generic Walmart brand cuz I already had some from awhile back before I boycotted it more fully. I have been in the habit of doing a lot of generic brand for some stuff cuz it avoids advertising. I used old El Paso enchilada sauce though and fresh onion. I’ll give the recipe when it’s fully done in a bit. Just about done. 💕💕💕💕💕💕💕🧿🧿🧿🧿🧿❤️❤️❤️❤️❤️❤️

About 7 minutes to melt the cheese on top if this and the veggies. I’ll say the full recipes and main source for the enchilada recipe when it’s done. Top cheese is pepper Jack cheese and cheddar mixture but more pepper Jack cheese. 💕💕💕💕💕💕💕🧿🧿🧿🧿🧿🧿❤️❤️❤️❤️❤️❤️❤️

The veggies were more for the side dish than the enchiladas which primarily were beans and sautéed onions. This has a bag of frozen broccoli and cauliflower and half of a 32 ounce bag of corn. Also a generous amount of McCormick taco seasoning and a few tablespoons of butter. This was my own recipe spontaneously tonight but I bet it’s one I’ll like a lot in future. Cook the frozen veggies according to directions and I put it in with the enchiladas to melt the cheese. 💕💕💕💕💕🧿🧿🧿🧿🧿🧿❤️❤️❤️❤️❤️

Recipe source for the enchiladas was the Betty Crocker website for black bean enchiladas. But I switched them for red beans. I’ll give the recipe on here later after I eat. 💕💕💕💕💕💕the veggies turned out super yummy! 💕💕💕💕💕💕the title of the enchilada recipe at the Betty Crocker website is black bean and cheese enchilada 💕💕💕💕💕💕💕🧿🧿🧿🧿🧿❤️❤️❤️❤️❤️❤️❤️❤️the whole thing turned out really well! First time trying that recipe . For both recipes.
